You'll need to set up a few things in /etc/rc.conf:
sendmail_enable="NONE"
exim_enable="YES"
and change some lines in /etc/mail/mailer.conf
sendmail /usr/local/sbin/exim
??send-mail /usr/local/sbin/exim
??mailq /usr/local/sbin/exim -bp
??newaliases /usr/bin/true
??hoststat /usr/local/sbin/exim
??purgestat /usr/local/sbin/exim
