Using a different field delimiter just moves the problem, but reading
6.15 held the solution: "If a colon is actually needed in an item in
a list, it must be entered as two colons.". So:

:SUBJECT=${sg{$header_subject:}{:}{::}}

seems to do the trick. Thanks for the pointer :-)
