I think the following will do this

archive_mail_router:
driver = accept
domains = +gateway_domains
transport = archive_mail_transport
no_verify
unseen

archive_mail_transport:
driver = appendfile
maildir_format = true
directory = /var/mail/archive/${domain}/${local_part}/
delivery_date_add
envelope_to_add
return_path_add
# user = exim
# group = exim
