You know, its strange, it does look like two are trying to run
mailnull 5152 0.0 0.0 6020 1816 ? SN 23:30 0:00
/usr/sbin/exim -bd -q60m
mailnull 5189 0.0 0.0 6028 1844 ? SN 23:30 0:00
/usr/sbin/exim -bd -q60m
But it only does that when I add local_interfaces. If I comment out
local_interfaces and start exim, I just get one
mailnull 4800 0.0 0.0 6024 1804 ? SN 23:28 0:00
/usr/sbin/exim -bd -q60m
Do you have any idea why it would start two? Does it start one per port
maybe?

Look for something (maybe an old Exim) running and already bound to port 25.
'netstat -pa | grep smtp' might show you what it is.
