And why should they trust you? The ISP could easily sniff port 25 traffic for that customer nevertheless. No real advantage here.

I don't think so. In your example: Why exactly can the user/client not use SMTP Authentication? He could also contact you and have his IP adress added at your mail server. All these scenarios could easily be solved without open relays.
