Actually, there are.

Have a look in the docs at 'warn', message, log_write, and friends -
including variables/expansions for time-of-day, connected IP, etc.

You can write just about anything you wish to, do so to anywhere in the
fs that the exim-user has rights to use, (including, of course, just
more detailed entries in the standard log files) and 'trigger' on most
anything.
