I was suspecting something like that, though I don't understand why
exim doesn't put it into that form on its own, if it gets multiple
results.

domainlist local_domains = ${tr {${lookup ldapm{ \
    user=LDAP_USER pass=LDAP_PASS \
    ldap://LDAP_HOST/ou=domains,LDAP_BASE?dc?one}}} {\n}{:}}
