Exim does not save a transcript of incoming SMTP sessions, so there is
no way it can regurgitate it for logging later. The only way to see such
things is to run with debugging turned on. With minimal debugging (-v),
you don't see much more than the SMTP transaction.
The same is true for outgoing messages.
