Found it.
It's the errors_to setting in the smarthost router:
> smarthost:
> driver = domainlist
> transport = remote_smtp
> route_list = "* gw.stuffed.animals byname"
> errors_to = "root"
> end
I moved aside the old config file, and used dpkg-reconfigure
(a Debian packaging tool) to regenerate a fresh new one.
Then compared the old to the new. Still didn't see it.
Substituted in parts of the old into the new until it broke.
It was errors_to that was changing the name. I must have set
it ages ago while trying to do something and forgotten.
