Andreas Metzler maintains Exim4 packages for Debian stable. Put the
following lines in your /etc/apt/sources.list file.
deb
http://www.logic.univie.ac.at/~ametzler/debian/exim4manpages/ woody/
deb
http://www.logic.univie.ac.at/~ametzler/debian/gnutls/ woody/
Do an 'apt-get update' then 'apt-get install exim4' to upgrade. Works
great, and will allow you to continue to track stable for security updates.
