From a similar discussion on the courier-imap list, I'm doing this now:

I applied the example given by Anand Buddhdev in this thread. It works
fine for me, but I may have changed it a bit, need to take a closer look
again. So exim handles quota stuff. Exim also writes a maildirsize file
into the maildir, Courier-IMAP will respect the settings in there. I
came away from giving courier-imap/pop3d (currently using pop3 only)
quota values, too. So my quota is only set by exim, courier does nothing
with it, it only respects whatever exim sets.
