Use the various test options in exim, and then whn you want to test
sending from external machines and see how it does, use the percent_hack
trick - user@server%gateway.com.

Yes.
We do the same thing at one of the places I admin the mail machines at -
we have two front end machines, round-robin'ed, and they do all the
filtering and pass back to the real server. We use callouts to verify
recipient, but we're moving to LDAP soon, so we can start moving away
from that.
