Whilst technically you could just allow all mail in at the Exim point,
given the prevalence of spam and viruses these days, I and others would
plead with you to continue your quest to check whether the recipient is
valid at the point where the mail hits Exim. Otherwise, you will end up
spamming lots of people (including us or our users) when you get stuff
with faked addresses (viruses etc.) in, because this will then cause a
bounce to be generated by Exchange, which will go back to the poor victim
whose address was faked. This is significantly less likely to happen if
you reject bad recipients at SMTP time when the mail hits Exim, and even
if it happens further up the line, at least you're not being part of the
problem.

However, as Bruce said, if the destination host is running Exchange 2003
then you can skip the LDAP complication: enable SMTP-time recipient
checking on Exchange, and then simply use the very handy "verify =
recipient/callout" (or a variation thereof) on the Exim machine, to do an
SMTP call to the Exchange server to check recipients.
