Install Exim with a default config, and fill in the hostlist
relay_to_domains. That's about it! (well, at least for a basic
configuration)

However, do read the archive of this and other lists in relation to backup
MXes and making sure they don't become an easy backdoor for spammers to
circumvent your policy controls...
