Well, a good start would be to read the Exim instructions, which you can
download from ftp.exim.org or http://www.exim.org/ . But for a quick
method for a Red Hat installation, there are RPMs and SRPMs available on
ftp.exim.org .

To integrate with an anti-virus scanner, you will most probably want to
use Exiscan ( http://duncanthrax.net/exiscan-acl/ ). I believe that this
is already included in some or all of the RPMs mentioned above on
ftp.exim.org, so if you use those then you may be up and running in no
time. Alternatively (and/or for some background on configuration and your
options), you could read my simple guide at

ClamAV is the best free virus scanner I'm aware of. It's true that some
people have had stability problems with it, but my own experience has been
that it's very reliable (at least with the latest version), especially if
you're only lightly loaded (which you suggest you are, since you're only
dealing with 500 mails a day). If you want to pay cash, you could get any
commercial virus scanner; many are supported by Exiscan (see the web page
mentioned earlier) and even ones that aren't can be used by using
Exiscan's generic option. I have also used Sophos, in conjunction with the
free daemon 'sophie' with success.

I think most people would consider that fairly quiet. I should imagine you
can handle it on the hardware you mentioned without any problem.
