'Unrouteable' means that none of the Exim routers in your configure file
accepted the address. I suppose it could have been a temporary DNS problem.
What does 'exim -d -bt sender.m@???' say?

That depends on your configuration. It could come from an explicit host name in
your configure file, an entry in a file referenced in a host list, or possibly
even a HELO name. Do you have helo_verify_hosts or helo_try_verify_hosts set?
