Check the Exim specification, the setting you are looking for is
qualify_domain.

exim sends a bounce message with the "From:"-header
Mail Delivery System <Mailer-Daemon@???>
but the destination refuses this address, it should be:
<someuser@???>
is there a way to replace this address ?
I'm using Exim 3.36 on Debian
