A matter of personal choice for whoever builds the distribution - Redhat
and Mandrake come with Postfix. Debian Linux comes with Exim.

The "switching" is basically done by the alternatives package in redhat
/ mandrake. There are plenty of exim rpms (such as the ones at
xtronics.com and timj.co.uk) that you can use, that support alternatives
so that you can switch between sendmail / postfix / exim as you please.

Or go to freebsd, which uses its /etc/mail/mailer.conf file to similar
effect.
