I think I got it working.
Heres the config i'm using:

--- config ---
defaults
no dns
protocol pop3
localdomains mydomain.com
fetchall

poll mail.server.com
        user "bbense" pass "???"
        no rewrite
        to *
--------------


This causes all mails that are in the mailbox with the destination host
'mydomain.com' to get directly passed to exim (well, port 25 on
localhost). Since exim knows how to handle those messages, no more
stuff is needed.
