(^.[^/]*)(/InfoTL\.RZV)@vit.de

or, more precisely (ie what i think you want):

^([^_]+)_([^/]+)InfoTL\.RZV@vit\.de

so that you already have family name in $1, given name in $2 (or
whichever order you have it).

this is just a regexp, not exim notation by any means. converting to
a format so that exim van work with it is left as an excercise.
