The eximstats Grand total summary (below) shows the total amount of traffic handled by Exim. It shows that you received 3488 messages (336MB) from various sources (internal, external, and mail bounce messages) and Exim then delivered it via your four different transports.
Because some messages had multiple recipients, the amount of mail delivered exceeded the amount received.
When you ask for statistics on your 'incoming messages' and 'outgoing messages', try using the -bydomain or -byedomain (which are available on recent versions of eximstats). This will show you how much mail has been received from your own domain. If you subtract this from the grand total, it will then show you how much has been received from other domains.
