The only file belonging to exim directly is configure.conf (i think),
the other files are created by your system (Debian?) and are most
probably referenced inside of the configure.conf file.
Please show configure.conf.
To solve your problem you can use many ways, rewriting the
Envelope-From, or adding a director that creates the new address.
