I'm not totally clear what you require, but I have set up a multi-domain exim
config quite simply, mostly by setting local_domains to be the two domains
being configured. However, there is definitely a lot of overlap in such a
config, and you might find that dangerous in your 'test' scenario.
Therefore, you could set up two exim processes, configured to listen on two
different ports (e.g. 25 & 24), which can therefore have two completely
different configurations. The downside of this is that although many programs
enable you to set the port used for smtp comms, not all do, so you might be
limited in how the test machine can be used.
