Try telnetting into port 25 on your server, and issue something like:
EHLO gseserver.net
mail from:<paolo@???>
rcpt to:<paolo@???>
data
"anything you want"
.
And post the output>

Have you tcp-wrapped the smtp daemon?
Should show up in /var/log/exim/main.log.
