If you're talking about the envelope sender, this snippet generated by
'eximconfig' on debian does the job (for exim3) :

Replace "dman.ddts.net" with your local hostname, and create
/etc/email-addresses like

local_username: public_address@public_domain.com
local_username2: public_address2@public_domain.com

It won't change the From: header that the recipient sees, though.
