src/smtp_in.c, search for "Too many unrecognized commands", it's just
above there. Source-only. Be wary about increasing it -- if it's too
large, then HTTP POST requests, using multipart-mime, might be accepted
by your SMTP server. Not good.
Five should be enough for most admin, typoing. Out of curiosity, why do
you want to increase it?

Set "log_smtp_syntax_errors" in your Exim config.
