Have a look at chapter 32 of the manual "Address rewriting", or Chapter 14
of Philip Hazel's book.

The idea is to end up in the "rewrite configuration" section of the exim
configuration file with lines such as

allen@??? allen@??? FfRs

where
allen@??? is an address meaningful only in the private LAN
space
allen@??? is the address used for the outside world
FfRs are flags controlling rewriting

The rewriting rules are highly customisable and at the same time quite
comprehensible.
