He's stupid, kinda. I would understand if it were _in addition
to_ bouncing.
And *all* mail or just mail to your local domain? I assume the
latter in my reply below.

Of course. When the processing reaches the system_aliases
director, it looks up an address, finds the *, delivers the
message and doesn't proceed to forwardfile and localuser. Remove
the * and undo what you did.
After the last director (Exim 3, right?), add a smartuser
director to forward all mail to your dear boss. Make it unseen,
so bounces will still go to the senders.
Before the forwardfile director, insert an unseen smartuser
director to forward all your boss's mail to you. If he doesn't
respect the privacy of others (after all, if your lover misspells
your local part as 'mattt', why would it justify his reading of
the message?), you shouldn't respect his privacy either.
