I do it too, though they do it to both the header from and the mail from.
It is certainly reasonable to do it to the envelope, I'm not so sure about
the header. I believe mine only does it to the envelope, so that it knows
it will be able to deliver a bounce if necessary.

I, personally, think it's crazy to try anything else.
