You mean the From: header, or the envelope sender address?
The envelope sender *MUST* always be <> for nondelivery messages. This
is to prevent loops. I don't beleive it can be changed, nor should it.
Now the From: header may be changeable. I'm not sure why you'd want to
change it though..
