If I got you right, header rewriting is the solution for your problem.

If you just want to replace the domain:

root@localhost          *   # so messages concerning root won't be touched
*@localhost             $1@???


If you want to use completly different addresses for each user:

*@localhost             ${lookup{$1}lsearch{/etc/email-addresses}\
                         {$value}fail} frFs


At least this works for me.
