If you're using any flavour of BSD, I'd strongly recommend newsyslog(8),
which does an excellent job of Exim log rotation.

You don't even have to use the available signalling functionality, since
Exim always performs an inode consistency check on the log file before
writing to it.

If you're not using a BSD system, then I'm sorry to have wasted your
time. :-)
