Actually Cyrus uses its own format which looks a bit MH/Maildir like,
but has additional indexing data so it requires you to use their
delivery tool.
Courier is straight Maildir
UW-IMAPD does mbox, MH, MBX, tenex and a few others natively, and
Maildir with patches.
