From some from of shell script you just call

/path/to/exim -t -oi

and provide the message as standard input.

Assuming that you have made /usr/sbin/sendmail a link to the exim binary,
you can call this with sendmail.

Note also, that if you are using perl, there are packages for sending mail
which will call sendmail (which you should have linked to the exim binary)
with appropriate options.
