You probably have something configured by Debian that rotates log files at
6.25, so check root's cron entries with crontab -l and see what kicks off
at that time. Exim does come supplied with a script called exicyclog which
wll rotate log files for you but you usually need to set up a cron job to
run it. One thing to point out though is that having files with owner/group
of root and permissions set to 777 (i.e. world-writeable) is a *BAD IDEA*
and should be avoided.
