We like to clear out the panic log after every, er, adventure. That makes
it easy to spot new panics (as I typed that sentence I realized we should
add watching the panic log for larger than zero to our monitoring).

We do have a monitor (other machine with mail capabilities *) which checks
that mail can be sent to and retrieved from the mail servers. [Send to a
special account with SMTP, retrieve the message with POP, whine--via
pager--if either part fails. Occasional false alarms when Exim decides to
queue everything.]

* It only took me one message during planning to point out the fallacy in
monitoring SMTP and POP on the same machine that is being monitored, if one
plans to use SMTP to send out alarms. ;-)
