I didn't set up the config file, so I'm just assuming that the intent was to
send any errors that occurred while forwarding to the admin user...(such as
being unable to find the user's forwarding info in the database).
The doc says that "certain error reports" get sent to the address specified
by errors_address in the main config.
Is there somewhere to specify what errors get sent to the address, or is it
something I should just set and see what happens?
Also, will using this override any errors_to settings in other directors?

You need to double-check the documentation for errors_to.

errors_to (director or router) option
Option: errors_to
Type: string
Default: unset
Delivery errors for any addresses handled or generated by the director
or router are sent to the address that results from expanding this
string, if it is set, and if it verifies as valid. In other words, this
option sets the value of the envelope sender address to be used for
deliveries associated with the driver. If it is unset, or fails to
verify, the errors address associated with the incoming address
(normally the sender) is used. A typical use might be
errors_to = "aliasmaster"
The `errors_to' setting associated with an address can be overridden if
it subsequently passes through other directors or routers that have
their own `errors_to' settings.

So the SMTP FROM has been set to the admin address, so that's where DSN
messages go. (I don't know DSN, but assume that it uses this).
What do you actually want to acheive, that you tried using "errors_to"?
Perhaps you want to check the documentation for "errors_address" in the
main configuration section (not per-director)?
