The Mercury server is ignoring the SMTP RFCs and should not be attached
to a network that handles mail. This is a bug - in the Mercury
software - pure and simple and should be fixed by the people providing
it.

It would technically be possible to rewrite <> to something different
in a rewrite rule, however you need to ensure that its only done on
mail going to the Mercury box (so the rewrite has to be conditional on
the recipient address, not sure if that can be done effectively). If
you start sending out bounces on the internet using a non null sender
address you deserve all the pain that will come down on you when you
get mail looped or worse.
