Yes. Easiest way is to not even change the scripts. Remove (or rename
and remove permissions from) the 'sendmail' binary. And 'mailq', whilst
you're at it. Replace them with symbolic links pointing to exim.

bash$ ls -l `type -p sendmail`
lrwxr-xr-x 1 root wheel 18 May 15 20:39 /usr/sbin/sendmail -> /usr/exim/bin/exim

Exim is pretty well command-compatible with sendmail. The common
options will certainly work. The only thing to be careful of is the
FAQ item Q5020:
