last would be (on red hat/suse maybe others)
mv /usr/lib/sendmail /usr/lib/sendmail.bak
ln -s /usr/exim/bin/exim /usr/lib/sendmail

this creates the symbolic link so that sendmail actually uses exim;)
u may or may not have to change some paths
