Looking out for the little gotchas like PGP often being configured to
also encrypt to the sender, so the mail is also encrypted against a key
which probably has a private copy on the server....

Definitely... and you need to make sure that not only can the data not
be read by others, but that you know if you have lost a message on the
way etc....
