That last line is useless as it stands. No $sender_address will ever be
"*@domain.com". Consequently, it will never be looked up. You have to
configure Exim to do special things if you want to handle defaults in
DBM (or any kind of lookup) files.
Change "dbm" to "dbm*@". This is explained in section 6.1, after the
bulleted items.
