In general, yes. However, you don't seem to have considered the
specifics of this case. Please read the configuration and my example
again.

You'll notice that the domain for which the receiving host would have
to implement the %-hack is not in the DNS. Furthermore, even should
someone talk to my gateway system it would refuse relaying for that
domain.

The only way mail could arrive for that domain at the machine that
needs to handle it would be for it to have been generated at that
site, or fed to it via the bsmtp system that we're setting up. (The
site needs no internet-accessible SMTP listener other than my
gateway.)
