[EXIM] How do postmasters edit headers on a message in the s…

I have heard reference to people editing the headers of messages sitting on
the spool.
How do people usually edit the headers? I just edit the -H
files in the spool directory. Is this the right way to do it?
How about exim -Meh to edit headers? <grin>
