I think you have hold of the wrong end of the stick.
exim does not add X-Envelope-To, and neither does smail.... I guess you
are attempting to use the Envelope-To address, but that address is the
original one received on that machine that your delivery derived from (so
it may well be an alias).

Why not duplicate the aliases used on the remote end into your local mail
config.

You need to find what magic used to do what you want, since it certainly
is not a normal exim or smail function. I always found Fetchmail to be
too damn clever by half and to try to do complex things where simple
things would work better (I slung it for a piece of perl).
