Have you set up an appropriate alias file so that deliveries to
Glenn.Carver@??? work? If not, there is no point rewriting
outgoing addresses, because the recipients of the messages won't be able
to reply...
Or have I missed the point here?

That applies only to incoming SMTP messages. Exim knows who the senders
of local messages are.
