If you want to get the domain of the last entry, try

    exim -be '${domain:${extract{-1}{,}{$recipients}}}'


or for testing

    exim -be '${domain:${extract{-1}{,}{ab@???, foo@???}}}'


($recipients contains a 'comma space' separated list, according to the
specs)
