In server mode, an alternative could be to leave sender_host_address alone and
just create a new expansion variable e.g $proxy_host_address. That would stop
any ambiguity in where the mail came from, but would still allow people to
perform operations on the real remote IP, ie:
deny condition = ${if def:proxy_host_address}
dnslists = zen.spamhaus.org/$proxy_host_address
