I personally use courier-imap (which provides both a POP3 and IMAP4
daemon). It's fast (compared to UW IMAP), flexible (authenticates out
of /etc/passwd, /etc/shadow, PAM, mysql, postgresql and ldap) and most
importantly, was designed to work with Maildirs.
