The way I collect -d evidence for incoming SMTP messages is to run a
command such as

exim -bd -d9 -oX 1225

which sets up a daemon that is listening on port 1225 rather than port
25. Because -d is set, it doesn't disconnect from the terminal. Then I
telnet to port 1225 from some other machine (or configure exim on some
other machine to output to port 1225). The -d output will appear on the
terminal. Because the daemon is still connected to the terminal, you can
kill it with ^C when you are finished.
